- 1Tbsp Sungold Lite
- 340g Chicken Breast
- 2 Garlic Cloves Sliced
- 200g Broccoli
- 200ml Chicken Stock
- 1 Heaped Tsp. Cornflour
- 1 Tbsp Honey
- 1 Lemon (Juice + Half Zest)
Heat oil in a pan/wok. Add sliced chicken breast and fry for 3-4 mins,
Remove from the pan and set aside on a plate.
Add garlic to the pan and stir fry broccoli for 1 min. Then cover and cook for 2 mins.
Mix the stock, cornflour and honey in a jug and stir well. Then pour into the pan and stir until thickened.
Toss the chicken back into the pan, heat through then add the lemon zest and juice.
Serve straight away with a side of sautéed baby potatoes.
