Bring water to a gentle boil. Add Onion, Garlic, Sliced Ginger, Black peppercorns, Carrots, dahnia stalks, Bay leaf. Simmer gently for 10-15 minutes.
Season steak with salt and pepper, then sear on both sides for 1 min, then set aside to rest.
Add noodies seasoning to the broth, then add noodles and cook for 3 minutes.
Slice the beef into thin strips.
Serve noodles in a bowl with the beef, fresh chilli and dhania.
