Keep The Cold At Bay With This Beef and Coconut Milk Stewed Matoke

This is a delicious local classic dish that have your tastebuds smiling all through lunch!

Beef and Coconut Milk Stewed Matoke

Serves: 3 Prep Time: 20 Cooking Time: 40

Ingredients

  • 9 Plantains/matoke, Peeled and thinly sliced
  • 250g of Beef, Cut into bite sizes
  • 4 tablespoons Golden Fry Vegetable oil
  • One bunch of Fresh Coriander , Finely chopped
  • 1 Large Onion, Chopped
  • 4 Tomatoes, Blended
  • 2 cups Coconut milk
  • 2 carrots, Cut into pieces
  • 2 Green bell pepper
  • ½ Ginger, Cut into fine pieces
  • 1 tablespoon Soy sauce
  • 4 Garlic Cloves, Peeled and crushed

Instructions

  1. Start by filling a big pot with water enough to cover the plantains and bringing it to a boil. Place the plantains in the boiling water and boil for 10 minutes. Remove from heat and set aside to cool off. Once cooled, peel of the skin and set aside
  2. Boil the beef in a saucepan and boil on medium heat for 20 minutes. Once soft, separate the broth from the meat.  In the same saucepan, heat up the vegetable oil on medium heat then add onions and fry till soft. Add the garlic cloves and ginger and fry till the beef starts to turn brown. Add the tomato paste and cook.
  3. Then add your tablespoon of soy sauce. The soy sauce makes the mixture richer, both in color and flavor.
  4. Add carrots and potatoes and stir the mixture well. Let it simmer on low heat for about 5 minutes stirring in between to avoid it from burning
  5. Place Matoke / Plantain (you can leave them whole or cut them in half or as you desire) and let it simmer for about 5 minutes then add ¾ of the coconut milk.
  6. Cover with a lid and on medium heat, allow the matoke to cook through. Poke with a fork to see if they are almost done. When they are almost soft, add the rest of the coconut milk and the chopped bell pepper then let it boil until all of them are soft.
  7. Garnish with the fresh coriander and serve hot
